oh snap.

Gingersnap that is...I adore gingersnap cookies. I literally could eat a jar of molasses (alright maybe just three huge spoonfuls-but still) because I love that deep, intense flavor so much. I searched through one of my cookbooks and found this recipe...

Ginger Cookies
Taken from the cookbook,  "The Commonsense Kitchen"  
(not exactly Gingersnaps-but they were suppose to be a more "kid-friendly" version and I upped the amount of molasses so that everyone was happy:))

3/4 cup (1 1/2 sticks) plus 1 tablespoon butter at room temperature
1 cup brown sugar
1/4 cup molasses (I added more)
1 large egg
1 teaspoon cider vinegar
2 1/3 cup all-purpose flour
1 tsp. baking soda
1 tsp baking powder
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
pinch of salt
granulated sugar for rolling

**cream butter and brown sugar...add molasses, egg and vinegar and beat well...add everything else and mix until just blended through. chill dough for one hour. preheat oven to 375 degrees and lightly grease two baking sheets (I just used my silpat), form the dough into 1-inch balls and roll in sugar. place two inches apart on sheet and bake for about 10 minutes. Once they form their crinkly top and are just barely browned, they are done. **








I really think cookies might be in my top three favorite desserts ever....how about you?? What do you love to satisfy your sweet tooth with??

I love gingersnap as well. In fact, I love all things ginger. I'll have to try this recipe.

I love Ginger Snaps too - though I have to talk my family into them. I also am finding I prefer cookies or cookie like desserts over many others - though ice cream may top the list, especially homemade maple with honey toasted pecans....oh dear so good. BUT back to cookies - I really to adore cookies and love to try many a recipe - backpack cookies - ever tried those?
